I headed out mid winter to the apple orchards of
northern CA. My goal was to gather one of the last organic heirloom apple
varietals still in season, abundant wild greens, and have a healthy and
delicious salad for lunch.
It wasn't long before I had enough clover, minor's
lettuce, chickweed, mustard greens and dandelion greens for a personal feast. I
garnished the greens with wedges of the winter apple, asiago cheese, and a homemade
balsamic vinaigrette for a true gourmet treat. As one forager put it, "eat
the weeds," and I most certainly do. These nutritious, abundant and free
veggies should not go overlooked! Keep the old ways alive!
